FIELD NOTES
1/3 of the batch hyperoxidised pre-ferment. Wild fermented on full skins for 12 days in open fermenters. Basket pressed into aged 300L barrels. Full malolactic fermentation. Barrel aged on lees for 12 months, all portions finally brought together without fining or filtration and hand bottled. V. low sulphur.
TASTES
Complex, savoury & textural; peach nectar, lemongrass, citrus peel, vibrant florals.
PERSONA
You will find them with charcoal, in the sunshine, sketching bodies.
DRINK NOW?
The Colossus is very much ready to drink now. However, if cellared for 1-2 years it will develop some more textural characteristics, so holding onto some bottles will be well worth the wait.
