The Atavica farm Vermentino was excellently managed, but it got hit pretty hard. So, the Vermentino harvest was \u003cem\u003etiny\u003c\/em\u003e. The Atavica crew made a small batch of direct-pressed Vermentino from some, and I took the remainder, \u003cem\u003eplus\u003c\/em\u003e the skins from their direct press, and wild-fermented it all in one 500L open vat. Hand-plunged twice daily. I then pressed off the double-double skin ferment to one 220L barrel, plus one damigiana, where it remained for 8 months to mature. Our first taste in May 2025 blew our minds, so we decided to honour this tiny-batch farm wine and keep it pure, unblended with our Colli Pisani Vermentino. And so it was bottled, completely unadulterated, in June 2025, just 293 bottles. We've brought half of that to Australia (only 140 bottles in total). He's a super dedicated organic grower who leases and nurtures three separate vineyards with his family in the Colli Pisani (Pisan Hills) region of Tuscany. I used his 2022 Trebbiano and Sangiovese for my first natural wine releases in Berlin and Denmark. In 2024, short on white grapes from the Atavica fields, I gave Alessandro a call to see if he could help us out. He had a little Vermentino to spare in one field and a little Malvasia to spare in another. We hired a van and hit the autostrada. The two varieties were harvested a few days apart. We fermented all in separate varietal batches in small open vats ranging from 500L to 1,500L. All batches were fermented on full skins, hand-plunged twice daily. The Vermentino was clean and bright, the Malvasia deep and floral. We've just finished picking Vermentino. The pickers have headed home. I wander out to the farthest Sangiovese field from the Atavica cantina to eat a bunch of grapes before lunch, sun blazing. \"Luuuuuuucccaaaaaaa, call them back!\" We knew we wanted an early-harvest pick of each Sangiovese block, for a very light and chillable red. The block I was eating was already \u003cem\u003eperfect\u003c\/em\u003e! We harvested multiple early, just-ripe parcels of Sangiovese from across the farm's fields over the next 3 weeks. Each was fermented separately in open vats, either 1,000L or 1,500L. Each was pressed slightly sweet (just before the end of primary fermentation, when there are still some sugars to ferment) into varying-sized barrels (220L to 1000L) plus one 1,000L stainless steel tank. All matured in these vessels separately for 8 months, then brought together for hand bottling. Wild fermented in one big stainless steel tank that was not \u003cem\u003eat all\u003c\/em\u003e designed for fermentation (try plunging 3000L of grape must – grape juice, skins and seeds – through a 40cm hole to break up a solid cap of skins nearly 1m thick). A lot of sweat and determination went into this wine (not literally \u003cem\u003ein\u003c\/em\u003e). Pressed to one very big and lovely 2500L barrel and matured for 8 months. We blended in just a touch of Petit Verdot (made the same way, on a much smaller scale) just before bottling.\u003c\/span\u003e\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eTASTING\u003cbr\u003e\u003c\/strong\u003eSpiced cherry, blueberry, blackberry, wild herbs and white pepper on the nose. Robust, bold body but super balanced with earthier hints of tobacco and iron.
