48-hour skin-soak. Wild fermented in-barrel for 20 days, full-malolactic fermentation in the same barrels on full lees, racked and aged in-barrel for 7 months.
A savoury tapestry of fresh straw, nectarine, red apple and wild strawberry. Driven & balanced with an acidic crunch and lingering nuttiness. Textural, moreish and delicate. One for the sun.
