FIELD NOTES
Our first harvest of Fiano in 2022, off vines grafted in 2020. A small amount was hand-picked, then de-stemmed and left to wild ferment in our experimental cellar. We fermented on skins for 5 days in an open tub, then basket pressed into 2 x aged 300L barrels. Full malolactic fermentation. Zero adds. Matured on lees for five months before hand-bottling (516 bottles).

TASTES
Savoury, juicy & textural; moonlight, ripe apricots, white figs, almonds.

PERSONA
Eating fruit with you, gazing at the moon.
