The tricky thing with the bag-in-box format is that it has a shelf-life. These last skinsy white-in-a-box have seen better days and are just getting a little oxy. So we're rolling them out at half price. Cook with it, by all means drink it, either way, time to clear the last boxes from the cellar ;)

Skin-contact Sauv. Blanc.
12.5% Alc/vol.

FIELD NOTES
Half fresh-pressed directly into aged barrels and fermented to dry, half wild fermented on full skins for 5 days, then pressed into barrels to complete fermentation. Full malolactic fermentation in the same barrels. Brought together and matured in barrel for 24-months before bagging up.

TASTES
Skinsy lift with some fresh-cut hay vibes. Lemon/lime sorbet, yellow grapefruit, some citrus pith depth. Bright and fresh.

PERSONA
The empath; time for the whole table (/or picnic rug).

DRINK NOW?
To be had now, many times over. It'll last, fresh and juicy, for 4-5 weeks once opened. Or store it on your bookshelf for a few months until the time is ripe, then let it flow out to your loves. Serve straight out of the box, best thrown in the fridge to chill first.
