FIELD
Perfectly ripe Sangiovese Grosso, the very plump cultivar of Sangiovese used to make Brunello. Wild fermented in one big stainless steel tank that was not at all designed for fermentation (try plunging 3000L of grape must – grape juice, skins and seeds – through a 40cm hole to break up a solid cap of skins nearly 1m thick). A lot of sweat and determination went into this wine (not literally in). Pressed to one very big and lovely 2500L barrel and matured for 8 months. We blended in just a touch of Petit Verdot (made the same way, on a much smaller scale) just before bottling.
TASTING
Spiced cherry, blueberry, blackberry, wild herbs and white pepper on the nose. Super generous and lush palate giving plump black cherry, ripe raspberry, blackberry and rhubarb alongside anise and spice. Robust, bold body but super balanced with earthier hints of tobacco and iron. A very classic Tuscan Sangiovese.
DRINKING NOTE
A big wine that wants bold accompaniments. Will develop after opening, possibly over days. Serve with very spicy or bold flavours. Incredible meat companion. Very at home beside tomato-based, oily pasta sauces. Next level with dark chocolate.
