The last harvest before the vineyard was ripped out.

100% Chardonnay.
Wild fermented. Zero additions. Zero sulphur.
Unfined. Unfiltered.
11.5% Alc/vol.
FIELD
Wild fermented on a hillside without power. 12 days maceration. Barrel-aged for two years under flor. Hand-bottled by gravity.
TASTING
Oxidative pink peppercorn, pear, quince and fresh apricot nose. Deep apricot jam and fig palate. Savoury apricot kernel and popping flor-acidity finish.
DRINKING NOTE
Given that this wine was left under flor and has had a very intimate journey with oxygen, it has the potential to mature into something truly special over a few years. This is one to cellar if you have the chance.
