FIELD
It's a tradition; a mother ferment, all harvest long, co-fermenting every variety from the vintage into one unified, cosmic juice. It all started with early-harvest Sangiovese soaked on skins for only 18 hours, with some direct-pressed Vermentino in a stainless steel tank. We then added to it as everything else was picked. Initially, it was mainly juice, with minimal skin contact. The last component added was the Malvasia, which went through full primary fermentation on skins, adding body and depth. Whilst the ferment was still active, we split the volume in two (the other part becoming the Misto Mysto Pét Nat – same wine, two techniques), and moved this part to a 700L stainless steel tank to mature for 8 months. Hand-bottled with no additions.  

TASTING
Super crisp, flinty florals and ripe blackberry on the nose. Maraschino, plump blackberry, blackcurrant, ripe pear and raspberry sherbet on the palate. Surprising body – intense, yet light. Malvasia up front, Sangiovese down back.

DRINKING NOTE
Total dark horse. Serve chilled, but not too chilled. It definitely develops really nicely after opening, even over several days. Great park wine. Great food wine. Big-time fave in the cantina.
